Made of aluminum, the rack is there to disperse heat and prevent jars from getting direct heat on their bottoms which could crack them from the intensity. While the rack is not suitable for use in smaller 3-quart pressure cookers, customers have confirmed that it's a perfect addition to the 23-quart Presto pressure canner. It can also be used as a separating rack for double stacking pints if there are two in hand.
