The Florida Sun Kefir Water Kefir Grains are a great source of natural probiotics. The kit comes with two large portion cups of kefir grains that can be used to produce water kefir. The product is shipped fast and comes with clear instructions on how to brew kefir from the grains. The grains are easy to use as all they need are water and a sugar source to thrive. The grains are very active and can be observed bubbling and bouncing up to the top and sinking back to the bottom. The kit comes with instructions on how to brew kefir from the grains. One needs to start by using water with no chlorine and dissolve three and a half tablespoons of organic raw sugar in a quart jar with a cup of boiling water. Add two and a half more cups of cool water to the quart jar and add 3-4 tablespoons of kefir grains. The water needs minerals to feed the grains, and one can add a slice of organic lemon, a pinch of baking powder, and, sometimes, a few slivers of ginger and a boiled eggshell to boost the minerals in the water. Ferment for 48 hours and then bottle the kefir in an airtight container with fruit to add fizz and flavor for 24 more hours. While the kefir grains thrive in a sugar source, the caster sugar can be substituted for other sugars like coconut sugar, maple syrup, and light molasses. The kefir grains are very resilient and can be stored in the fridge with a quarter cup of sugar and about two cups of water for up to five days.
